Chicken and Green Beans Stir Fry

I haven't been very active on the blog recently, I'm sorry.  I do have so many recipes to share with you. I haven't had the time to sit and write them down.

Here's a simple easy recipe that you can put together. The only difficult part is making sure you have the ingredients. The recipe itself is super super easy.



Serves 5

Here's what you will need

500 grams green beans (washed and ends removed)
 1 tbsp Sesame seeds.

400 grams boneless chicken (breast or thighs)
2 tbsp Canola or Sunflower oil

1 medium onions sliced and layers separated.
1 small garlic grated or minced + 1 med garlic sliced
1 small piece ginger sliced
1 tbsp corn flour
1 tbsp soya sauce.
1/2 tsp pepper
2 tbsp chopped Chinese parsley or Cilantro
1 tbsp green onions for garnish (optional)

For the sauce
2 tbsp light soya sauce
1 tbsp Brown Sugar
1 tbsp cooking sherry  (optional)
1 tbsp rice vinegar
1 tbsp corn flour
A few drops of Tabasco sauce (to taste)
2 tbsp sesame oil

Method:

Clean wash and pat dry the chicken. Cut into bite size cubes.
Add the soya sauce, garlic, cornflour and pepper.
Stir well and set aside to marinate for 30 minutes on the counter or a couple of hours in the fridge. 
 Slice the onions, ginger, garlic and parsley.
Place all the sauce ingredients in a bowl and set aside.
To cook. 
Stir fry is generally a quick dish - so ensure you have the above all ready before you turn the flame on. 
Add 1 tbsp canola or sunflower oil into a work or wide surface pan.
Add the chicken pieces in a single layer.

Add the sliced, onions garlic and ginger. 
Let cook on medium high for 2 to 6 minutes tossing them as you need too. .
Note: if you use breast meat you will need to cook for only 4 to 5 minutes, if you use thigh meat you will need to cook for about 6 to 8 minutes to ensure your chicken in cooked.
Remove the chicken from the pan and keep warm.
 Add another 1 tbsp of oil to the wok or pan and add in the beans.
Saute for about 3 to 4 minutes tossing them as needed. Add about 2 tbsp of water to create steam and help them cook without sticking to the bottom of the pan.
They should be tender to bite into but still firm to hold up straight.. Add in the sesame seeds.
Add the chicken back into the wok.  Stir well.
Add in the sauce. Stir fry for about 2 minutes on medium until every thing is well coated with the sauce. 
Taste for seasoning. 
Note: If you notice I have not added salt in the list of ingredients. Depending on the type and brand of soya sauce you buy you may or may not need salt. Some low sodium ones have less salt so do taste for seasoning before you switch the flame off.
And that's it. You done..
Serve hot with steamed rice of a bowl of hot noodles.
