Baked Fish Fillet

Today, I want to share with you one easy fish recipe that I make on days when I'm so busy I have no time to cook.

I think most moms are familiar with a situation like mine... Last Friday, I had a bit of more orders than I could handle, so making dinner at these times is rather challenging. My cake got picked up at six which was great. Then I look around and my sons says mama I'm already hungry.

Lucky, my husband had bought this fish fillet that day instead of the usual chicken. So I quickly baked this fish, made some oven fried potato chips and some green beans. Friday dinner is ready in less than an hour.

Serve 3 
Here's what you will need:

800 grams Fish Fillet  (one large or several small) - I'm using Tilapia but any will do.
1/2 red onion chopped
1 small garlic chopped
2 tbsp chopped parsley
2 tbsp bread crumbs
1 tbsp Parmesan Cheese grated
1 tbsp lemon juice + 1 tbsp extra
1 tsp sweet or hot paprika
2 tbsp olive oil. 
salt and pepper to taste.

Method:
Preheat the oven at 190C / 380F
Clean, wash and pat dry the fish.
Place the fish in a baking dish. I line mine with foil for easy clean up.
Add salt, pepper, 1 tbsp of lemon juice to the fish and set aside for 10 to 15 minutes.

Note : I prefer to cook the onions and garlic before I add it to the bowl. Just because my kids do not like raw onions. This way they do not taste it.

So in the bowl - add onion, garlic, parsley, bread crumbs, Parmesan,paprika, salt and pepper.
Stir well to combine.
 Add the lemon juice and olive oil. Stir well. The mixture should look crumbly, not too wet but not too dry..
Spread the mixture over the fish fillet. 
Place in the oven at 190C/380 F for 20 minutes or until the fish is flaky when touched with a fork. 
Remove from the oven and let sit for 5 minutes before you transfer to a platter.
To transfer to a platter - just use a large flat spatula.
