Oven Fried Crispy Chicken

Who doesn't love the Fried Crispy Chicken..! I know not many hands go up.. Who wants to consume all that oil used in Fried Crispy Chicken?
I'm not counting any more!

I love Fried Crispy Chicken and I absolutely adore that southern fried crispy chicken which means you actually deep fry the chicken twice! (one isn't crispy enough lol!) 

Well, this is the next best thing to that crispy fried chicken... I told you with all the lovely cakes around me already rich and high in calories.. I cannot afford to deep fry my chicken.

Here's how I make mine..

6 chicken sticks

First Bowl
flour for coating
Salt and pepper to taste.

Second Bowl
Bread crumbs for coating (you could also use crush cornflakes for a more crispy chicken)
Salt and pepper to taste
2 tbsp of finely chopped Parsley (optional)

Third Bowl
One Egg (beaten)
2 tbsp water (or milk or cream)
1 tsp mustard paste
1/4 tsp Paprika powder
3 to 4 drops of Tabasco sauce.
salt, pepper to taste.

Method:

Skin, wash, pat dry the chicken drumsticks. Add salt and pepper.
Prepare the three bowls with the ingredients mentioned above. and stir to combine. 
Next, coat the chicken.  First in the flour, next in the Egg mixture and lastly in the bread crumbs or Crushed cornflakes. 
Place them on the plate.
You could continue to bake them now or prepare them ahead of time and leave them in the fridge for a couple of hours. 
Bake.
Preheat the oven to 180C/360F - Coat the chicken piece with Pam spray nicely..
The Pam spray will give it a nice brown color. 
It's best to spray them before you place them on the baking try or the paper gets messy.
(I forgot so you can see in the next picture what I mean).
See the brown spots of oil? that's from the spray!
Bake them in the preheated oven for about 45 minutes. Turning one in between. 
And that's how I make Oven Fried Crispy Chicken.
I have made them with crushed cornflakes instead of bread crumbs and they are absolutely amazing.
But my kids don't eat cornflakes so buying cornflakes just for the chicken never always happens.

I wrap a piece of foil at the base of the drumstick so it's easy for my kids to eat them without the 'mama my hands!!!"
