Baked Chicken and Vegetables.

This is a very simple, easy and quick baked dish. When I say quick I mean you barely have to do much but it does go into the oven for about 45 minutes to an hour..

I usually make these on days when I have no time to cook a meat as well as a vegetable side dish. I like to ensure the kids have their veggies everyday.

Here's how I make mine.

6 chicken pieces (thighs, legs preferably) - Cleaned, washed and pat dry.

 Veggies of your choice.. I'm using some carrots, potatoes, onions and peas... You could add in some pumpkin, squash or even zucchini if you please.
Cut all the veggies into bite size pieces.
Place the chicken and veggies in a baking dish. Sprinkle with salt and pepper.
In a bowl, combine
1 tbsp mustard paste
1 med garlic clove minced
2 tbsp olive oil
1 tsp paprika
1 tbsp lemon juice
1/2 tsp cayenne or a few drops of Tabasco. 
Stir well to combine.
Pour over your chicken and veggies in the baking dish.
Mix well and ensure all the chicken piece are well tuck under again.
 Cover with a foil and place in a preheated oven at 180C/360F for about 40 minutes.
Uncover and continue baking for a  further 10 minutes basting with the pan juices. 
 And that's it.. Dinner is ready!
