Tuna Pancakes

If you love tuna, you will love this recipes. It's simple, easy and delicious.  However, if you do not make these right.. they tend to taste fishy. So follow my instructions carefully.


 
Here's what you'll need

1 can Tuna (in water) drained well.
1 Small onions chopped
1/2 small garlic clove
1 tbsp flour
1 egg
1 small potato
1 tbsp chopped parsley (optional)
1/4 tsp paprika (optional)
Salt and pepper to taste
Canola oil for frying.


Method:

Chop the onions and garlic. Saute in a pan on medium heat. I usually do not use any oil. This is just an attempt to take the raw onion and garlic taste. But you can certainly add oil or even leave the onion and garlic raw and add them to the mixture.

Shred the tuna flakes well so there are no lumps.

Peal the potato and keep in a bowl of water to avoid browning.

Get all your ingredients ready. 
Place a wide pan on high flame.
You need to be fairly quick from here on - so the potatoes don't discolor.

In a bowl add all the ingredients except the potato and tuna.
Mix thoroughly, then grate in the potato.  
Mix thoroughly, then add in the tuna flakes.
Do not over mix the tuna, just barely blend it. Over mixing can make these pancakes very fishy.
Add a table spoon or so canola oil on the hot pan. You dd not need too much oil. 
Using a table spoon, place a dollop of mixture on the hot pan over high flame and flatten with the back of your spoon.
Cook for one minute on high, then reduce the flame to medium and let cook further for 2 to 3 minutes.
Remember the shredded potato is raw!
Flip over and cook again on high for one minute then reduce flame to medium and cook for further two minutes.
And that's it.. A perfect side dish.   I do hope you try these.
