Stir fry Turkey with Noodles

This is an oriental dish. Some times I like to play with ingredients and try new things.
You might be surprised at the combination of ingredients but when put together the end result is absolutely fascinating.



Serves 3


Here's what you'll need:

400 grams Turkey meat. ( you could also use chicken of course)
1 med onion
1 med garlic
1 small piece of ginger
1 packet powdered Japanese Dashi  (optional)
1/4 cup cilantro or parsley chopped.
1/4 cup chopped green onions.
1 tbsp lemon juice.

Marinade

1 tsp garlic minced
1 tsp ginger minced 
4 tbsp corn flour
2 tbsp soya sauce
few drops of Tabasco (to taste)
1 tsp Worcestershire sauce
2 tsp Brown sugar
Salt and pepper to taste.

 Method:

 Clean, wash and dry the meat.

 Slice into long thin slices - This is easier done if semi frozen. ( I have fresh meat so cut it as best I can)
Place all the marinade ingredients in a bowl with the meat, stir well to combine.
Set in the fridge for an hour to 6 hours.
For those who do not know..
This is Dashi. It's a Japanese ready made powder that is used to prepare Miso soup as well as other Japanese dishes.
If you cook Japanese at home you should have it, or else skip it. It's delicious even without.
Cooking the Meat:

Place a pot of boiling water and cook noodles as per packet directions while you prepare your Turkey.  
Chop the onions, ginger and garlic into thin long slices.
As well as the green onions, parsley/cilantro - set aside.
 Place one tbsp of canola oil in a wok or wide open pan.
 Add the ginger, garlic. Saute for 30 secs.
Add onions and a pinch of salt.
Cook on medium high, stirring occasionally until golden in color.
You want them to brown a bit but still keep their texture.
Remove from the pan and set aside.
Add another tablespoon of oil. place the piece of marinated meat in the wok on high.
You want them to first seal and brown from the corn flour.
 After 2 minutes - turn them over and brown on the other side.
Now, stir them around and let cook.  Add a tablespoon water at a time if needed to help cooking.

Note:  If you add too much water; the corn starch will form a rue and you will loose the crisp exterior.
This should take about 5  minutes. Take a piece of meat in your fingers and tear, to see if it is cooked.
  Once the meat is cooked add the Dashi powder. Stir fry for another minutes.
 
Add the chopped onions, green onions, Cilantro /Parsley and lemon juice.
(I'm not using green onions as my son doesn't like them - but they do add tons of flavor)
 Stir to combine and turn the flame off immediately.
Serve as a side dish or as a main meal with some Noodles.
That's my lunch.
