Guess what's in season at the moment? Mangoes!!! Yumm.
Can never have enough of them.
I make almost every thing my kids will eat with Mangoes. Mango Popsicle, Mango Custard, Mango Ice-cream, Mango Mousse, Mango Jelly.... and of course they love the fruit on it's own too.
Don't these look delicious? Trust me you can't get any easier or tastier than these. They are some where in between a Popsicle and an Ice-cream - really !
The recipe below should be enough to make about 12 to 15 Popsicles.
Here's what you'll need.
2 tbsp unflavored gelatine
2 cups mango Juice (room temperature)
2 cups sliced mango fruit.( Fresh or canned)
2 large scoops of plain or vanilla ice-cream
1/4 cup water.
1/4 to 1/2 cup sugar depending on the sweetness of the mangoes.
1 to 2 tbsp sugar (optional)
Method:
Soak the gelatin in 1/4 cup water and let stand for about 2 minutes.
Heat in the microwave for 30 seconds or on a double boiler.
Let cool to room temperature.
Wash, peel and dice the mango. Be careful with the seed, it is quite slippery making it difficult to cut into the fruit. Messy job!
If you don't have fresh mangoes in season - use 2 cups canned mango pulp.
To the gelatin add the mango juice very slowly. The mango juice has to be room temperature or else the cold just will cause the gelatin to form small granules. Pour slowly and blend well.
Now add 1/4 cup sugar.
Next add the mango fruit.
Next add the Ice-cream,
Now place all in the blender and blend until smooth and fluffy.,
Taste the mixture to check for sweetness. I usually do not add any more sugar than the first 1/4 cup.
However, sweetness is an individual preference so if you need add more sugar now and blend.
Note: These do taste a tad less sweeter when they are frozen.
Pour into the Popsicle molds.
Place the tops on and place them in the freezer for a couple of hours or over night. .
Once frozen, just place the Popsicle mold under running water and it will release the Popsicle out.
