Za'atar Chicken

Zartar is a middle eastern spice that is used very commonly on Hummus and other spreads. It has a very strong flavor.

If you like Zartar you will love this recipe. I happen to see an episode by Nigella Lawson while on a trip to London and remember she used it in her baked chicken. This is not the original recipe but this is how I made it and now it's my family favorite.
It's so easy to make that I usually save this recipe for days when I know I'm going to be drowned in cake orders.

Note: If you a working mom. Just marinate the chicken in the previous night or morning and leave it in the fridge. Come home throw it in the oven and dinner is ready while you freshen up...


Here's what you'll need:

8 chicken pieces - I use thighs
1 1/2 tbsp Za'atar Spice
2 tbsp olive oil
4 tbsp water

Method:
Preheat the oven to 200C/400F
Wash and pat dry chicken thighs.  I have about eight here.
Place them in a baking dish, bottom side up.
Pour about 2 tbsp of olive oil and coat the chicken well.
 Spread a tablespoon of Za'atar spice over.
 Flip the chicken
and spread another 1/2 tablespoon of Za'rtar again.
add 4 tbsp water in the pan not over the chicken.
Place in the oven on the center rack. And bake for about 30 to 45 minutes - until almost golden.

Note: If you use skinless chicken like I am. Bake for 20 minutes, flip the chicken over and tent the chicken with foil so it won't dry out. Bake for another 15 minutes. If needed take the foil off for the last 5 minutes so the chicken will brown.
