Chicken and Broccoli Stir Fry

Been almost a week since I posted a recipe! wow.. Have really been busy.
 Kids, winter.... a bad combination for me.

Here's a quick and easy dish to make, so I thought I'd share today.
It's quick and easy only after you have the ingredients... most often that's is the only problem right? Been there.

 I like to serve mine with noodles but this goes equally well with steamed rice too.


Serves 4 
Here's what you will need:

500 grams / 1lbs - Chicken breast or thighs cut into strips.
2 cups Broccoli florets - separated. Stems chopped thinly.
1 med onion sliced and layers separated.
1 med garlic sliced thinly
1/2 inch ginger sliced thinly 
1/4 cup Cilantro or Chinese Parsley chopped
1/4 cup Cashew nuts 
2 tbsp canola oil

Marinade
1 tbsp dark soya sauce
1 tsp pepper
1 tsp Sesame Oil 

Sauce
2 tbsp light Soya Sauce
2 tbsp Chinese rice wine or sherry
1 tbsp Hoisin Sauce or Oyster sauce (optional)
1 tbsp Corn flour
1 tbsp brown sugar
A few drops of Tabasco sauce 

 Method:
 Marinate the chicken with the soya sauce, cornflour, sesame oil and pepper. Set aside for 15 minutes or an hour. 
It is always a good idea to have all your ingredients ready when making a stir fry. You want to cook on high and fast for best results.
Wash and chop Broccoli and drain any excess water.

 Add 1/2 tbsp oil in a wok - stir fry the cashew nuts until lightly toasted.
Remove from the pan on a paper towel.
 To the same pan add another 1 tbsp oil - stir fry the chicken on high.
The corn flour in the marinade will give it a crispy coating.
Cook for about three to four minutes only
Remove chicken and keep warm.
 Add the remaining 1/2 tbsp oil to the wok. Now start stir frying the remaining ingredients.
Start with the ginger and garlic, followed by the onion and broccoli stems.
saute for about two minutes.
Next add in the broccoli - add about one tbsp of water to create steam and help cook the broccoli.

 Once the broccoli is tender...
add the chicken and cashew nuts back to the pan.
Add the sauce, stir well to coat everything.

Add in the Cilantro or parsley.
Check for seasoning, if needed - add salt - depending on the brand of soya sauce used; you may or may not; need any additional salt. 
 and that's how I make my Chicken and Broccoli stir fry.

  1. Great combination of chicken and broccoli! I usually stir fry broccoli with oyster sauce which is quite the common style here. This gives me a one dish meal which I can pair with rice for the family.
