Turkey Croquettes

This is a very versatile dish. You can have them to jazz up some pretty dinner table. When you have teenagers save these in the fridge for those odd snack hours when you don't know what to give the kids.
A very common dish in my family. My mom would have them in the fridge all the time. Just heat one up - place it between two sliced of bread and you have a sandwich.
Not to mention these are absolutely easy to make. Plus you can choose to shallow fry or bake these


Here's what you will need:
500 grams ground turkey
1 large potato -  boiled and peeled 
2 tbsp olive oil
1 large onion chopped
2 large garlic minced fine.
1 inch piece ginger minced fine
1/2 cup parsley chopped
1 tbsp lemon juice.
Salt and pepper to taste.
1/2 tsp cumin powder
1/2 tsp coriander powder
1 Beaten egg
1/2 cup Bread crumbs 

Method:
Chop all the ingredients as suggested above.
Boil to potato - You can place the potato in a pot of what and boil for about 10 minutes. Alternatively, wrap the potato in a paper towel soaked in water.Place in the microwave for 4 minute on high. Careful as this will be very hot after 4 minutes.. Mash with fork.

Add two tbsp olive oil in a skillet. saute ginger, garlic. and onions.
Once the onions are translucent, add the ground meat.
Break the meat up and cook on high.
Ground meat cooks faster. This should take about 8 to 10 minutes. Stir often to avoid any burning.
You need to cook on high so the water will be evaporated making it easy to form into Croquettes.
Place all the ingredients in a bowl. Mashed potato, meat mixture, parsley.
Add ground spices along with salt and pepper, lemon juice.
The mixture should hold itself when you form a ball.

Alternative method: A short cut to these recipe here is that you can add 2 tbsp of bread crumbs and an egg to this mixture. Form balls and shallow fry them 5 minutes on each side. Or spray with olive oil and bake them in a preheated oven at 200C/400F for about 15 minutes. The first method does make a nicer presentation though.
Continue with first method:
You can make small flat balls forming croquettes at this time.
I use a 1/4 cup measure cup. I pack the mixture into the cup. 
Flip the cup onto my baking tray and Voila you have all the same size and perfect shape.
You can make this recipe ahead until here and freeze them on a tray for a few days. A day before let them thaw in the fridge and continue with the next step.

I prefer to place them in the fridge for at least 1/2 hour  before the next step.
Makes it easier to handle.
Drip the croquettes in beaten eggs and coat them with bread crumbs. 
All coated with beaten eggs and bread crumbs.
You can shallow fry or bake these at time time or let them sit in the fridge for a day or two until you are ready to serve.

Shallow Fry - You can shallow fry them on a hot skillet with a tbsp of two of olive oil or
Bake - You can spray them with cooking spray. place them in a preheated oven at 200C/400F for 15 minutes. 
Here you can see I have shallow fried them.. Actually barely fried them. With just 1 tbsp of olive oil on each side to help browning. 
Once fried lay them on a serving platter and serve.
