Zucchini is not a favorite of children but most kids seem to enjoy this recipe.
My son calls it Green Pizza. You can also make them into small individual fritters especially when you have a party.
I make it as a large quiche and then cut it into slices which my kids call Green Pizza.
Here's what you'll need:
1 Zucchini - Medium - Grated.
1/2 onion - medium - cut finely
1 Garlic - small -minced to a paste.
1 Egg
2 tbsp All purpose Flour
2 tbsp Canola Oil
2 tbsp chopped Parsley or Cilantro
Salt and Pepper to taste.
Method:
Grate the Zucchini - I use the thick side of the grater.
Add all the rest of the ingredients to the bowl - onion, garlic, egg, flour, salt, pepper.
Give it a nice stir. The mixture might appear a bit dry but the Zucchini will release some moisture.
Add 1 tbsp oil in a wide open pan. When hot.
Spread the Zucchini batter, cook on high for one minute.
Reduce the flame to a medium low and cook for a further five minutes.
You will see the edges are a bit crispy...
Shake the pan and remove the fritter onto a large plate. Uncooked side up.
Now place the same fry pan over the plate.
And flip the pan and plate upside down... CAREFULLY.
Now the uncooked side of the fritter is down.
Again, cook on high for one minute - reduce the flame to medium high and cook for another five minutes.
When done remove onto a serving plate and serve hot..

I have seen Zucchii fritters recipe before but never been tempted to try. Your detailed explanation makes one want to try something new.

I will try the Zucchini pots next but with chicken. I hope that's ok.
