Oatmeal Cookies

The blend of oatmeal, chocolate chips, raisins and cinnamon..... I'd say a perfect combination.

These little cookies are absolutely delicious. What best is the kids don't even realize that amongst the raisins and chips there are oats inside. My three year old prefers these over chocolate chip cookies. And of course, Ziv and me love them.

Makes 24 Cookies

Here's what you will need:

225 grams /  1 cup / 2 sticks Unsalted Butter (room temperature)
220 grams / 2 cups All Purpose Flour
1 tsp baking Soda
1/4 tsp Salt
1 tsp Cinnamon
200 grams / 1 cup Brown Sugar
100 grams / 1/2 cup  White Sugar
2 large Eggs
1 1/2 cup Rolled Oats
1/2 cup Chocolate Chips
1/2 cup Raisins
1/2 cup chopped Pecans or Walnuts or Oats (see note)
1 tsp Vanilla extract

Note: If you prefer to make this nut free you can substitute the nuts with Oats.

 Method:
Swift the Flour, Baking soda and salt.
Cream the butter and two sugars until  light and fluffy.
Add in the Eggs, Cinnamon and Vanilla.
Next add in the Flour mix
Add the oats, raisins and chocolate chips
Stir well to combine.
Drop spoonfuls on to a baking tray.
Chill the baking tray for 15 minutes before you bake.
Bake in a preheated oven at 170C/350 F for about 8 to 10 minutes
Remove and cool on a baking tray
Stack and store in a cookie jar.
Enjoy..

    1. Yes, egg is used in the recipe.. No I do not think it would be a good idea to omit the eggs. You can look for other egg free oatmeal recipes this may or may not work. Sorry. Never tried..
