Baked Cilantro Chicken

By now you probably realized that since I work from home, most of my everyday meals are simple, easy and quick with not too much work involved. 
This again is a simple easy and yet delicious recipes that gets done with very little effort. 



Here's what you'll need:

6 skinless Chicken quarters or One whole skinless chicken  cut into 6 to 8 pieces.
1/4 cup Olive Oil
2 large garlic cloves
1 inch piece fresh ginger
1 medium red onion
1/2 cup chopped fresh Cilantro leaves.
1/4 tsp sweet paprika (optional)
1 tbsp lemon juice
Salt and Pepper to taste.

Method:

Clean and cut and pat dry the chicken.
Place the chicken in a baking dish.
Have all your ingredients ready. Clean the onion, ginger, garlic and chop roughly.

Place all the ingredients in a blender, including the olive oil and lemon juice.
Blend to a smooth paste.
Pour over the chicken. Coat the chicken well.
You can let the chicken rest in the marinade for a minimum 1/2 hour to over night.
Sometimes I marinate the chicken at night and bake it about 2 hours before lunch the next day.


Bake in a preheated oven at 190 C/380F for about 45 minutes. Turning the chicken over once or twice during cooking for even browning
and that's it - your baked Cilantro Chicken is ready.
Serve it with rice or baked potatoes. The sauce at the bottom of the pan taste great with bread.

  1. I tried this recipe along with the Chicken Pilaf today. My husband and me loved it. The cilantro was a big strong for my kids but they still enjoyed it.. Mine took longer than mentioned in the oven. But it was a wonderful meal.
