Strawberry Cupcakes with Strawberry Jam Centers and Strawberry Buttercream

Look at these gorgeous Cupcakes - Arent' these just the most scrumptious strawberry cupcakes you've seen? I think these would be perfect for Valentines day! Don't you?

 These are my Strawberry cupcakes, baked with strawberry jam in the middle and topped with Strawberry Buttercream topped with delicious sweet Strawberries.



I actually did take a video on how to make these cupcake, all of it, How to make the cupcakes, the strawberry Buttercream and how to pipe the buttercream on the cupcake but due to my recent computer problems I was unable to edit the video and post it.
But I still wanted to share this scrumptious recipe so here it is..

For those who prefer the text a bit large here is the recipe and method in details.
 
Makes – 12 to 14 cupcakes
Ingredients:
  • 150 grams / 2/3 cup – unsalted Butter
  • 170 grams /6oz white fine grain Sugar
  • 170 grams or  1 ¾ cup Cake flour
  • 1 tsp Baking powder
  • ½ tsp Baking soda
  • Pinch of salt
  • 3 large Eggs
  • ¼ cup Strawberry Puree
  • 1/4 cup finely chopped strawberries (Optional) 
  • ½ tsp Vanilla extract or
  • ½ tsp Strawberry extract
  • 2 tbsp. Milk
  • 12  /14 tsp. Strawberry Jam for each 

 
Method:
  • Place all ingredients in a bowl (except the chopped Strawberries if using)
  • Use a whisk or electric mixer to  mix until all is well incorporated. 
  • Add the chopped strawberries if using now. 
  • Line cupcake pan with cupcake liners
  • Pour ¼ cup batter into each liner.
  • Add 1 tsp strawberry jam in the center of each batter
  • Pour more ¼ cup batter over the top.
  • Tap pan to settle the batter
  • Bake at 170 C /340 F for about 18 to 20 minutes.
  • Cool – then decorate with Strawberry Buttercream  
Note: The color of you strawberry cupcake batter will be determined by the color combination of your egg yolks, strawberry puree and dark vanilla extract.
For example - if you use dark orange egg yolks and dark vanilla extract the resulting color of your cupcakes will be a light brown or dark cream color. You can add a drop of two of Pink food color to ensure you have a nice Pink Strawberry cupcake.


 
Strawberry Buttercream 
Ingredients 
200 grams unsalted Butter
400 grams powder sugar
½ cup Strawberry Pure
½ tsp Strawberry extract

Method;
  • Cream the butter
  • Add half the powder sugar - continue to incorporate.
  • Add the balance powder sugar followed by strawberry puree
  • Continue to mix this for three minutes on medium until it's all well incorporated.
  • Add Strawberry extract  - mix
  • If necessary add one or two tablespoons of  milk to the buttercream to get a medium peak consistency.


Assembly 
  • Once the strawberries are cooled completely, 
  • Place the Strawberry Buttercream in a piping bag with a large star nozzle
  • Pipe your desired swirl. I piped them like an ice cream scoop.
  • Sprinkle with some red sugar sprinkles or sugar hearts and top with a strawberry.

    I finally made your strawberry cupcakes and strawberry buttercream for my sister in law. This recipe was looonnngggg pending... She fell sick all these days so couldn't bake for her... But today I feel blessed.... She loved it... And thanked me for the cupcakes BUT I got to Say THANKS TO YOU. Love you my ANGEL VEENA
