Tortilla Wrap - Chicken and Avocado


Can you believe it?  I make these on days when I have no time to cook. Really!
The fresh tortillas get done in about 15 to 20 minutes.. When the dough is resting I get all the filling ingredients ready.
Hot tortillas for a quick dinner - how amazing is that?
Have you tried grilling the tortilla wrap in a sandwich press? - The cheese melts and makes it more awesome.  Try it.
As promised yesterday, here's how I make this easy and delicious Chicken and Avocado tortilla wraps.


Ingredients - all of which are optional! 
Note : If you do not have Avocado - just use Mayonaisse instead the avocado spread.

4 tortillas fresh or warmed

For the Avocado Spread
1 Avocado medium
1/4 tsp garlic powder (I have a few cloves of roasted garlic )
2 tbsp sour cream
1 tbsp lemon juice

1 cup Shredded or chopped Chicken (left over or freshly made)
1/2 Tomatoes sliced or chopped
1 cucumber sliced or chopped
1/2 cup Lettuce chopped (optional)
1/4 cup Cilantro or Parsley chopped

1/2 cup Shredded Cheese - smoked, Mexican - any of your choice
Salt and pepper to taste.

Method:

 Here are the tortilla wraps I made yesterday
Here I have all my ingredients I want for my wrap.
My kids prefer the slice cheese, while I prefer the shredded white cheese,
I prefer Cilantro but I don't have cilantro today so I threw in some Parsley
I have left over chicken form the roast I made the previous day too.
Make the Avocado Spread:
Peal and pit the avocado. Place in a bowl with the garlic, salt, pepper, lemon juice and sour cream. 
Mash it with a fork to make a fairly smooth mixture. 
Now make your wrap -
Spread some Avocado mixture, Chicken, followed by the veggies - cucumber, tomatoes, cheese.
Roll over like a jelly roll.
Cut in half and serve.
That's it.. Dinner is served.
