Quick and Easy Chicken Curry

This is my lazy Chicken curry which I make when I'm craving for Indian food but don't have the time or energy to make some. The bonus for me - it's my son's favorite curry. He generally loves Indian curies but this is the highest on the list.

It really is quick and easy Chicken curry with no chopping or marinating involved.





Here's what you will need.

800 grams boneless Chicken or 1 kg chicken pieces with bone. (approx)
1 large tomato chopped
1 tbsp tomato paste (mostly for color)
1 cup Yogurt or Coconut Cream (see note below)
1 tbsp lemon juice
2 tbsp canola oil
 salt to taste

Grind to a Paste
1 large onion
4 large garlic cloves
2 inch piece ginger
1 cup Chopped Cilantro
2 green chiles chopped  (optional)
5 fresh curry leaves (optional)

Spice Mixture 
1 tbsp coriander powder
1/2  tbsp cumin powder
1/4 tbsp turmeric powder
1/2 tbsp garam masala
1/2 to 1 tbsp Chilly powder or Cayenne (to taste)
1 tsp pepper powder

Note : To make this parve - just use coconut cream instead of Yogurt. You can also omit the yogurt and coconut. Just add a little water instead but I think these add a nice richness to the gravy.

 Method:
 Clean, wash and chop chicken.
Add 2 tbsp oil in a skillet. Add the ground onion mixture and fry in oil well until fragrant.
The mixture will dry out.
 Now add the spice mixture. Add tomatoes, tomato paste..
Stir and cook for about 2 minutes. If necessary add a few tbsp of water so the spices do not burn.
Add chicken, yogurt and salt.  Stir well.
Partially cover and let cook on medium for 5 minutes.

 Add 1/2 cup water, partially cover and cook on medium for 10 minutes. 
This is how it should look. The oil should float on the surface.
The house should have the smell of Chicken curry.
Add Lemon juice, check for seasoning.
Check for consistency. If you are serving this with Rice, make gravy by adding a little water.
If serving with Chapati or Naan , cook for a while longer until the extra liquid is evaporated.
I',m serving with Chapati so I cooked until I got a thick curry.
Sometimes I serve it with rice too. 
 That's it.. It's looks like a long post. But you have to admit it's not a difficult recipe. Just a matter of finding the spices.. A wiz in the mixture and you have a delicious curry.
Serve it with rice and it's absolutely delicious too.
