Oven Baked Zucchini Sticks

I recently met a friend who raised an eye brow because she realized I feed my family Zucchini quite often. Yes I do..
It's a good source of Vitamin C, Potassium and Beta Carotene. It's very low in calories and has a high content of water. It can be eaten raw or cooked. Most importantly I make fun stuff with it. like this so my kids love it.

These make a great side dish or healthy snack.


Serves 3 to 4

Here's how I make these Zucchini Sticks.
2 medium Zucchini
1 Egg beaten
2 tbsp milk
2 tbsp flour
1/2 cup bread crumbs
salt & pepper
Paprika
lemon juice (optional)

Method: 
Preheat the oven to 200C/400F. Line a baking tray with Parchment for easy cleanup.
Cut the Zucchini horizontally first and then into sticks.
Like so... Add salt, pepper, paprika and lemon juice.
Toss then in the flour
In a bowl - mix egg, milk, salt and pepper.
Toss the floured zucchini sticks in the egg mixture.
Next, toss them in bread crumbs.
Lay them on a parchment line baking tray and bake at 200C/ 400F for 15 to 20 minutes.
They will be brown like so.. Crisp on the outside and moist on the inside.
 Take them off the baking tray immediately so they do not get soggy.
