Quick Indian Spiced Potatoes.

This is a quick and easy way to make some Indian Spiced potatoes.
It takes 3 minutes to cook the potatoes and another 2 minutes to spice it up..! 
So if you have Indian spices on hand - it's a must try.
You can make it as spicy or as mild as you want.



 Serves 2

Here's what you will need:
2 large or 3 medium potatoes
1 tsp ginger paste or grated
1 tsp garlic paste or grated
2 tbsp Canola Oil
1 tsp black mustard seeds

Spice Powder 
1 tbsp curry leaves (optional)
Chilli powder / Cayenne -( as spicy as you want) - I use 1/2 tsp of chilly powder to make it mild.
1 tsp coriander powder
1/2 tsp cumin powder
1/4 tsp turmeric powder

1 tbsp lemon juice
Salt and pepper to taste
1/4 cup chopped cilantro leaves.

Method: 
Peal, and cube potatoes.
Boil in a pot of water for 3 minutes or until the potatoes are soft but not mussy.  Alternatively
Place the potatoes in a microwave safe bowl - add1/4 cup water - cook on high for 3 minutes.. Turning once between cooking.

It is important that you keep all your ingredients ready when preparing this cause it take barely 3 minutes to cook.
Add oil to the pan. 
Add mustard seed and let them crackle..
Add curry leaves if using. ( I run out of those at the moment )
 Add in the ginger, garlic, stir on low heat.
Add in the spices and 2 tbsp of water.
Stir well - do not let the water dry out because the spice will burn. Add a tbsp more water if needed.
You want the spices to be moist but not have a puddle of water or the potatoes will be mushy.
Work on a low flame. this step takes less then a  minute. You will get the sweet smell of the spices cooked.
Throw in the potatoes. Toss them to coat with all the spices. 
 Once the potatoes are nicely coated with the spices.
Add the lemon juice and cilantro.
 Your potatoes are ready to be served..
