A couple of year ago I happen to be at a middle eastern restaurant with some friends and I tasted a dish similar to this.
While some of us enjoyed it very much, the rest of them found the flavors too strong. More than the taste I loved the concept of layered meat and potatoes, but I couldn't remember it's name. So I created my own version.
I recently got to know the name of the Libyan dish - Mubattan kusha. There are tons of very different variations on the internet that you can try.
Though not authentic, I still continue to make my version because the flavors are not too strong and can be paired with any other non-middle eastern dishes.
This is a simple and easy dish. A bit time consuming but a great dish to have especially when you having guest.
You can make it in parts. Assemble and bake an hour before your guest arrive.
Serves 3
Here's what you'll need:
4 large Potatoes
1 tbsp olive oil
salt and pepper.
For the Turkey mix:
500 grams ground / minced Turkey (I use minced thigh meat)
1 med to large -Onion - finely chopped.
1 large garlic clove - l - minced well
1 inch piece ginger.- minced well
1/2 cup chopped parsley
1 medium tomato - seeds removed and chopped.
1 tsp sweet paprika
1 tsp cumin
1/4 tsp cinnamon or all spice.
2 tsp lemon juice.
To assemble:
3 large eggs
1/4 cup milk
2 tbsp flour
Salt and pepper to taste.
2 tbsp bread crumbs
Method:
Preheat the oven to 190C/380F
Prepare the Potatoes
Clean, wash and peel the potatoes
Cut them into round slices like so.. length ways. Not to thick but not paper thin either.
Place them in a bowl, add a tbsp of olive oil, salt and pepper. Toss to coat.
Place the slices of potatoes like so. If you need to over lap, do so between the gaps.
Place in a preheated oven and cook for about 20 minutes. turning them once or twice.
Prepare the Turkey:
Place the ground turkey in a wide pan without any oil.
Break it up and brown on medium high, so all the water will evaporate. Once browned set aside.
Cut the onions, ginger, garlic, tomatoes and parsley as mentioned above.
Heat 2 tbsp olive oil in the same pan after the Turkey and saute the onion on medium heat.
Add in the ginger and garlic too.
Once the onions are translucent add the rest of the ingredients.
First the spices, saute for two minutes and switch the flame off.
Add the tomatoes, parsley and lemon juice.
Stir well and set aside.
Mean wile the potatoes should have been baked. Take out of the oven and set aside.
Assemble the dish:
Reduce the oven temperature to 180C/360F.
You can use a pie dish or a shallow baking dish for this, as long as it's oven safe.
Layer half the potatoes in an even layer over lapping each other like so.
Next add the turkey mixture. Use the back of a spoon to press evenly.
Layer the remaining potatoes over the turkey.
Mix together the eggs, milk, salt pepper and flour. Blend with a whisk.
Pour over the potato and turkey layers.
Sprinkle the bread crumbs with a spoon.
Bake in a preheated oven at 180C/360F for about 20- to 25 minutes Or until a toothpick inserted in the center comes out dry not wet.
and that's your baked turkey and potatoes.
