Clover Leaf rolls

It's nice to see that some of you have had successful attempts with my recipe for focaccia as well as Dinner Rolls. 

Here's another bread recipe for you to try.. Clover Leaf rolls. Don't they look tempting?


 
Here's what you will need:

1 1/2 cup Milk - warm
1 large egg
2 1/2 tsp / 1 sachet - Instant dry yeast
2 tbsp sugar
1 tbsp salt
50 grams melted butter
500 - 600 grams - All purpose flour.

Method:

Have all your ingredients ready.
Warm the milk ant melt the butter.
add in the yeast and sugar. Stir well to dissolve the yeast.
Set aside for five minutes
After five minutes - this is how the yeast mixture should look, this is the yeast activated 
Add the egg, salt and give it one more stir.
Add about 4 cups of the flour into a mixer bowl. 
Or you could mix it by hand too..!
Make a well in the center and pour the yeast mixture.
Using the hook attachment. Mix the dough.
This is my mixture after four cups.
Continue to add flour a little at a time.
 This is my dough after 5 1/2 cups (600 grams) flour.
The dough should be soft, but not sticky.
Continue to mix the dough on low for about 6 to 7 minutes.
If it sticks to the sides of the bowl add a table of flour at a time. You want a soft, smooth dough but not too sticky but not too tough either.
Here's my dough after six minutes of kneading.

Place in an oiled bowl. Brush some oil on the dough too..
Cover with Cling/plastic wrap and leave it in a warm place for about an hour or until double in volume.
 Double in volume..!
Punch down and knead for a few seconds.
Divide the dough in half, each half in four. 

Divide the dough into smaller portions the size of a roll.
Divide each portion into three smooth balls. Three balls make one roll. 
Spray two muffin tins with Pam or oil spray.
 Place three balls into one muffin tin like so..
Once done. Cover with a damp kitchen cloth and let rest for about 40 mins until almost double in size.
After 40 mins....! double in size.
Preheat oven to 190 C/380F..
Brush with egg wash and bake in the preheated oven for 20 to 22 mins.
Let cool in the pan for 10 minutes. 
After 10 minutes take them off the muffin tins and cool on a wire rack to avoid steam from making them damp.

  1. Made this a few times and it came out soooooooo good. Then I made a variation and added sun dried raisins. It was gone before the morning. Next time I will try with chocolate chips. Thing is I don't make small rolls but two breads, one nice large one that lasts the week and one smaller one for the weekend. The best recipe on the net. Thank you Veena

    I am amazing at how talented you are.. I just saw your cake blog. I'm absoulutely amazed at your creations.
