Avocado and Egg Sandwich Spread.

Two tablespoons of Avocado is about 45 calories/8 grams of fat while 2 tbsp of Mayonnaise is about 114 calories.

No I'm not a health freak but I do like to maintain some balance in our diet. After all, with a cake decorator for a mom my kids eat more than the usual desserts allowed.

Avocado can be bland on it's own but a few additions and it's absolutely delicious.
It's on my shopping list every week.
Mash an Avocado, add salt and pepper, spread it over a slice of beard and my son will enjoy every morsel. Lucky me!!!!

Here's a sandwich spread I make when I need a quick meal especially in the evening after a long day. Or when I'm in between my work and don't have time to cook.



Here's what you'll need. 

1 Avocado (medium size)
2 eggs
1 tsp garlic oil (optional)
1 tbsp lemon juice
2 tbsp Cilantro
1 tbsp sour cream (optional)
2 tbsp green onions chopped fine
Salt and pepper to taste.

Method:
Can't make anything more simple than this.
Mash the avocado,
Boil the eggs and grate the boiled egg whites, (I usually only use the egg whites but you could use the whole egg)
Chop the cilantro fine.
Place everything in a bowl, including any optional ingredients your using and mix.
Add salt and pepper to taste...


 That's it... Can't get any easier than this...!
